2.In a bowl, combine the ground peanuts, ginger powder, garlic powder, chili powder, paprika, onion powder, dried thyme, black pepper, and salt to create the Suya spice blend.

3.Place the pork belly on a clean surface and score the skin in a crisscross pattern using a sharp knife.

4.Rub the Suya spice blend all over the pork, ensuring it is evenly coated.

5.Roll the pork belly tightly and secure it with kitchen twine.

6.Heat the vegetable oil in a large oven-safe skillet over medium-high heat. Sear the pork belly on all sides until browned.

7.Transfer the skillet to the preheated oven and roast the pork for approximately 2 hours, or until the internal temperature reaches 63°C (145°F).
