In this Eritrean adaptation, we incorporate the traditional Eritrean spice blend called berbere, which adds a distinct heat and complexity to the dish. Preparation

    Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.

    Add the minced garlic and grated ginger to the pot and cook for another minute.

    Add the beef cubes to the pot and brown them on all sides.

    Stir in the berbere spice blend, ground cumin, ground coriander, ground cardamom, ground cinnamon, and fenugreek seeds. Cook for a few minutes until the spices become fragrant.

    Pour in the coconut milk, tomato paste, and beef broth. Stir well to combine.

    Bring the stew to a simmer, then reduce the heat to low. Cover the pot and let it cook for about 2 hours, or until the beef is tender.
