1.Heat the vegetable oil in a wok or large skillet over medium heat.

2.Add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant and the onion is translucent.

4.In a small bowl, combine the Sichuan peppercorns, chili flakes, and five-spice powder. Add this spice mixture to the wok and stir well to coat the chicken.

6.Add the julienned carrots, sliced red and green bell peppers, and snow peas to the wok. Stir-fry for a few minutes until the vegetables are slightly tender but still crisp.
