Preparation

1.Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.

2.In a large mixing bowl, whisk together the flour, baking powder, salt, star anise, Sichuan peppercorns, and ginger.

3.Add the cold butter to the dry ingredients and use your fingertips to rub it into the flour mixture until it resembles coarse crumbs.

5.Gradually add the milk, mixing until the dough comes together. Be careful not to overmix.
