Preparation

1.Preheat the oven to 325°F (160°C).

2.Heat the vegetable oil in a large oven-safe pot over medium heat. Add the chopped onion and minced garlic, and sauté until softened.

3.In a small bowl, combine the ground juniper berries, allspice, dried thyme, salt, and pepper. Rub the spice mixture all over the pork shoulder.

4.Push the onion and garlic to one side of the pot and place the seasoned pork shoulder in the pot. Sear the pork on all sides until browned.

5.Pour the beef broth and apple cider vinegar into the pot. Sprinkle the brown sugar over the pork.

6.Cover the pot with a lid and transfer it to the preheated oven. Cook for about 3-4 hours, or until the pork is tender and easily shreds with a fork.

7.Remove the pot from the oven and transfer the pork to a cutting board. Shred the pork using two forks.
