Preparation

1.Rinse the basmati rice under cold water until the water runs clear. Drain well.

2.In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant.

3.Add the chicken pieces to the pot and cook until browned on all sides.

4.Stir in the ground cumin, ground coriander, ground turmeric, paprika, cinnamon, salt, and pepper. Cook for an additional minute to toast the spices.

5.Add the rinsed basmati rice to the pot and stir well to coat the grains with the spices.

6.Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.

7.Remove the pot from the heat and let it sit, covered, for 5 minutes to allow the rice to steam.

8.Fluff the rice with a fork and transfer it to a serving dish.
