Preparation

1.In a large mixing bowl, combine the all-purpose flour and salt. Add the vegetable oil and mix until the mixture resembles coarse crumbs.

2.Gradually add water and knead the dough until it becomes smooth and pliable. Cover the dough with a damp cloth and let it rest for 30 minutes.

3.In a separate pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent.

4.Add the ground cumin, paprika, turmeric, and chili powder to the pan. Stir well to combine the spices with the onion and garlic mixture.

5.Add the mashed black beans, shredded chicken breast, and frozen corn kernels to the pan. Season with salt and pepper to taste. Cook for 5 minutes, stirring occasionally. Remove from heat and let the filling cool.

6.Preheat the oven to 200°C (400°F).

7.Divide the dough into small balls and roll each ball into a thin circle.

8.Place a spoonful of the filling onto one half of the dough circle. Fold the other half over the filling to form a semi-circle. Press the edges firmly to seal the samosa.

9.Repeat the process with the remaining dough and filling.

10.Place the samosas on a baking sheet lined with parchment paper. Brush the tops with cooking spray or olive oil.

11.Bake in the preheated oven for 20-25 minutes, or until the samosas turn golden brown.
