Treat your ingredients with care...
- Avocado — Choose ripe avocados that yield to gentle pressure when squeezed. If they are not ripe enough, place them in a paper bag with a banana or apple to speed up the ripening process.
- Mango — Look for mangoes that are slightly soft to the touch and have a sweet aroma. To easily dice a mango, slice off the sides, score the flesh, and then scoop it out with a spoon.
- Pineapple — Use fresh pineapple for the best flavor. To prepare, slice off the top and bottom, stand it upright, and carefully cut off the skin. Remove the core and dice the pineapple.
- Jalapeno pepper — Wear gloves when handling jalapenos to protect your skin from the spicy oils. Remove the seeds and white membrane for a milder heat.
Tips & Tricks
- For a spicier guacamole, leave the seeds and membrane of the jalapeno pepper intact.
- Add a squeeze of orange juice for an extra tropical flavor.
- Serve the guacamole with traditional Brazilian cassava chips or plantain chips for an authentic touch.
- If you prefer a smoother texture, blend the guacamole ingredients in a food processor instead of mashing by hand.
- To prevent the guacamole from turning brown, press a piece of plastic wrap directly onto the surface before refrigerating.
Serving advice
Serve the Brazilian-style guacamole as a dip with tortilla chips or as a topping for grilled meats, fish, or tacos. Garnish with additional cilantro leaves and a sprinkle of cumin for an attractive presentation.
Presentation advice
Transfer the guacamole to a colorful serving bowl to showcase the vibrant tropical colors. Arrange some sliced limes and fresh cilantro sprigs around the bowl for a decorative touch.
