Preparation

  1. 1.
In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent.
  2. 2.
Add the beef bones and stew meat to the pot, and brown them on all sides.
  3. 3.
Sprinkle the paprika over the meat and vegetables, and stir well to coat everything evenly.
  4. 4.
Pour enough water into the pot to cover the ingredients, and add the bay leaves. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 2 hours, or until the meat becomes tender.
  5. 5.
Add the diced carrots, potatoes, bell pepper, and tomatoes to the pot. Season with salt and pepper to taste. Continue simmering for another 30 minutes, or until the vegetables are cooked through.
  6. 6.
Stir in the lemon juice, and adjust the seasoning if needed.
  7. 7.
Remove the bay leaves from the soup before serving.
  8. 8.
Ladle the Sarajevo Delight Soup into bowls, and garnish with freshly chopped parsley.

Treat your ingredients with care...

  • Beef bones — Make sure to choose bones with some meat attached, as they will add flavor to the broth.
  • Paprika — Opt for high-quality Hungarian paprika for the best flavor.

Tips & Tricks

  • For a richer flavor, you can roast the beef bones before adding them to the pot.
  • If you prefer a spicier soup, you can add a pinch of cayenne pepper or chili flakes.
  • Serve the Sarajevo Delight Soup with a dollop of sour cream for added creaminess.
  • This soup tastes even better the next day, so consider making a larger batch for leftovers.
  • Feel free to customize the vegetables based on your preference or seasonal availability.
