Preparation

1.In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until they turn translucent.

2.Add the paprika, cumin, dried thyme, and bay leaf to the pot. Stir well to coat the onions and garlic with the spices.

3.Add the diced potatoes and vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes, or until the potatoes are tender.

4.Meanwhile, wash the spinach thoroughly and remove any tough stems. Roughly chop the spinach leaves.

5.Add the chopped spinach to the pot and cook for an additional 5 minutes, or until the spinach wilts.

6.Remove the bay leaf from the soup and season with salt and pepper to taste.

7.Using an immersion blender or a regular blender, puree the soup until smooth and creamy.
