Preparation

1.Heat the olive oil in a large pot over medium heat. Add the beef cubes and brown them on all sides. Remove the beef from the pot and set aside.

2.In the same pot, add the diced onion and minced garlic. Sauté until the onion becomes translucent.

3.Add the carrots, parsnips, and potatoes to the pot. Stir well to combine with the onion and garlic.

4.Return the browned beef to the pot. Add the bay leaves, dried thyme, paprika, salt, and black pepper. Mix everything together.

5.Pour in the beef broth and red wine (if using). Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the stew simmer for 2-3 hours, or until the beef is tender.
