In this Swiss-inspired adaptation, we have replaced the traditional Japanese flavors of agedashi tofu with a Swiss herb sauce. The original dish typically features a soy-based sauce with dashi, mirin, and soy sauce. By incorporating Swiss herbs and flavors, we have created a unique fusion dish that combines the crispy texture of agedashi tofu with the aromatic freshness of Swiss herbs. Preparation

1.In a mixing bowl, combine the all-purpose flour, baking powder, salt, and black pepper. Gradually whisk in the sparkling water until a smooth batter forms.

2.Heat vegetable oil in a deep pan or pot to 180°C (350°F).

3.Dip each tofu cube into the batter, ensuring it is fully coated, and carefully place it into the hot oil. Fry the tofu in batches for about 3-4 minutes, or until golden brown and crispy. Remove with a slotted spoon and place on a paper towel-lined plate to drain excess oil.

4.In a separate bowl, combine the Greek yogurt, fresh parsley, chives, thyme, lemon juice, salt, and pepper. Mix well until all the ingredients are incorporated.

5.Serve the crispy tofu nuggets with the Swiss herb sauce on the side for dipping.
