Preparation

  1. 1.
In a large mixing bowl, combine the chickpea flour, vegetable oil, turmeric powder, red chili powder, asafoetida, cumin seeds, chaat masala, and salt.
  2. 2.
Gradually add water to the mixture and knead it into a smooth dough. The dough should be firm and pliable.
  3. 3.
Heat oil in a deep frying pan over medium heat.
  4. 4.
Take a portion of the dough and place it in a sev maker or a piping bag fitted with a sev plate.
  5. 5.
Press the dough through the sev maker directly into the hot oil, moving your hand in a circular motion to form a spiral shape.
  6. 6.
Fry the sev until golden brown and crispy. Remove from the oil and drain on a paper towel to remove excess oil.
  7. 7.
Repeat the process with the remaining dough.
  8. 8.
Once the sev has cooled, sprinkle it with additional chaat masala for extra flavor.
  9. 9.
Store the Crispy Masala Sev in an airtight container to maintain its crispiness.
