Preparation

1.In a large pot, combine the diced watermelon, sugar, lemon juice, cinnamon stick, and cloves.

2.Place the pot over medium heat and bring the mixture to a boil, stirring occasionally.

3.Reduce the heat to low and simmer the mixture for about 1 hour, or until the watermelon has softened and the mixture has thickened.

4.Remove the cinnamon stick and cloves from the pot.

5.Using an immersion blender or a regular blender, blend the mixture until smooth.

6.Return the pot to the heat and simmer for an additional 10 minutes to thicken the jam further.

7.Remove from heat and let the jam cool completely.

8.Transfer the jam to sterilized jars and seal tightly.
