Ingredients
In this Nauruan adaptation, we incorporate the flavors and ingredients commonly found in Nauruan cuisine. While the original Filipino Spamsilog uses garlic fried rice, we opt for fragrant jasmine rice to complement the Nauruan palate. Additionally, we enhance the dish with a touch of Nauruan spices and seasonings to infuse it with the unique flavors of the island. Preparation

1.Cook the jasmine rice according to package instructions.

2.While the rice is cooking, heat the vegetable oil in a skillet over medium heat.

3.Add the Spam slices to the skillet and cook until golden brown and crispy on both sides, about 3-4 minutes per side. Remove from the skillet and set aside.

4.In the same skillet, fry the eggs sunny-side-up until the whites are set but the yolks are still runny.

5.Once the rice is cooked, fluff it with a fork and season with salt and pepper to taste. Optionally, sprinkle the Nauruan spice blend over the rice and mix well.

6.Divide the cooked rice into two bowls and top each with a slice of Spam and a sunny-side-up egg.
