Preparation

    Heat vegetable oil in a large pot over medium heat.

    Add minced garlic, grated ginger, and bruised lemongrass stalks. Sauté for 1-2 minutes until fragrant.

    Add thinly sliced beef to the pot and cook until browned.

    Pour in the beef broth, soy sauce, and oyster sauce. Bring to a simmer.

    Add the tofu, onion, carrots, bell pepper, green beans, and mushrooms to the pot. Cook for 5-7 minutes until the vegetables are tender.
