Ingredients
In this Malagasy adaptation of Sukiyaki, we incorporate the unique flavors of Madagascar by infusing the broth with ginger, garlic, and lemongrass. Preparation

1.Heat vegetable oil in a large pot over medium heat.

2.Add minced garlic, grated ginger, and bruised lemongrass stalks. Sauté for 1-2 minutes until fragrant.

3.Add thinly sliced beef to the pot and cook until browned.

4.Pour in the beef broth, soy sauce, and oyster sauce. Bring to a simmer.

5.Add the tofu, onion, carrots, bell pepper, green beans, and mushrooms to the pot. Cook for 5-7 minutes until the vegetables are tender.

6.Season with salt and pepper to taste.

7.Remove the lemongrass stalks before serving.

8.Serve the Malagasy-style Sukiyaki hot with steamed rice.

- Tofu — To enhance the texture, you can press the tofu before cutting it into cubes. Place the tofu between paper towels and place a heavy object on top for 15-20 minutes to remove excess moisture.
- Lemongrass — Bruise the lemongrass stalks by lightly pounding them with a rolling pin or the back of a knife. This helps release the flavor into the broth.
