Preparation

1.Preheat the oven to 180°C (350°F).

2.Butterfly the pork tenderloin by making a lengthwise cut down the center, without cutting all the way through.

3.Open up the pork tenderloin and flatten it with a meat mallet until it is an even thickness.

4.Season the inside of the pork tenderloin with salt and pepper.

5.Lay the prosciutto slices evenly over the pork tenderloin.

6.In a bowl, combine the breadcrumbs, minced garlic, chopped parsley, and grated pecorino cheese. Mix well.

7.Spread the breadcrumb mixture evenly over the prosciutto.

8.Starting from one end, tightly roll up the pork tenderloin and secure it with kitchen twine at regular intervals.

9.Heat the olive oil in an oven-safe skillet over medium-high heat.

10.Sear the stuffed pork tenderloin on all sides until browned, about 2 minutes per side.

11.Transfer the skillet to the preheated oven and roast for about 25-30 minutes, or until the internal temperature reaches 63°C (145°F).
