Ingredients

Preparation

1.Rinse the sushi rice in cold water until the water runs clear.

2.In a medium saucepan, combine the rice and water and bring to a boil. Reduce heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and the water has been absorbed.

3.In a small bowl, whisk together the rice vinegar, olive oil, oregano, basil, garlic powder, onion powder, and salt.

4.Once the rice is cooked, transfer it to a large bowl and add the vinegar mixture. Stir until the rice is evenly coated and let cool to room temperature.

5.In a small bowl, mix together the mayonnaise and Sriracha sauce.

6.Lay a sheet of nori seaweed on a sushi mat or piece of plastic wrap.

7.Spread a thin layer of the mayonnaise mixture over the nori.

8.Add a layer of rice on top of the mayonnaise, leaving a 1-inch border at the top.

9.Add a layer of shrimp, prosciutto, avocado, cucumber, and carrot on top of the rice.

10.Using the sushi mat or plastic wrap, tightly roll the sushi into a cylinder shape.

11.Repeat with the remaining ingredients.

12.Slice the sushi into 1-inch pieces and serve.
