Preparation

1.In a bowl, whisk together pineapple juice, soy sauce, ketchup, brown sugar, rice vinegar, minced garlic, grated ginger, sesame oil, and chili flakes.

2.Place the pork shoulder in a slow cooker and pour the marinade over it. Cover and refrigerate for at least 4 hours or overnight.

3.Preheat the oven to 325°F (160°C).

4.Remove the pork shoulder from the marinade and season with salt and pepper. Reserve the marinade for later use.

5.Heat a large oven-safe pot or Dutch oven over medium-high heat. Sear the pork shoulder on all sides until browned.

6.Add the reserved marinade to the pot and bring it to a simmer.

7.Cover the pot and transfer it to the preheated oven. Cook for 3-4 hours, or until the pork is tender and easily shreds with a fork.

8.While the pork is cooking, steam the sweet potato cubes until they are fork-tender, about 15-20 minutes.

9.Once the pork is cooked, remove it from the pot and shred it using two forks.

10.Return the shredded pork to the pot and mix it with the remaining sauce.
