Ingredients

While the original French Tarte Tatin is made with apples and a buttery pastry crust, our soulful version swaps the apples for sweet potatoes and incorporates the flavors of soul food. The caramelized glaze is made with brown sugar instead of white sugar, adding a deeper, more robust sweetness to the dish. We alse have the original recipe for Tarte Tatin, so you can check it out.

Preparation

  1. 1.
Preheat the oven to 200°C (400°F).
  2. 2.
In a 10-inch oven-safe skillet, melt the butter over medium heat. Add the brown sugar, vanilla extract, cinnamon, and nutmeg. Stir until the sugar has dissolved and the mixture is smooth.
  3. 3.
Arrange the sweet potato slices in a single layer in the skillet, overlapping slightly. Cook for 5 minutes, allowing the sweet potatoes to caramelize in the glaze.
  4. 4.
Roll out the puff pastry sheet to fit the size of the skillet. Place the pastry over the sweet potatoes, tucking in the edges.
  5. 5.
Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the pastry is golden brown and crispy.
  6. 6.
Remove the skillet from the oven and let it cool for 5 minutes. Carefully invert the skillet onto a serving plate, allowing the sweet potatoes to release and form a beautiful caramelized topping.
  7. 7.
Serve the Soulful Tarte Tatin warm, with a dollop of whipped cream or a scoop of vanilla ice cream.
