Preparation

1.Rinse the collard green leaves and pat dry. Remove the tough stem from each leaf and blanch in boiling water for 1-2 minutes until slightly softened. Drain and set aside.

2.In a shallow dish, mix together the flour, salt, black pepper, garlic powder, and paprika.

3.Dip each chicken strip in the buttermilk, then coat in the flour mixture.

4.Heat the vegetable oil in a large skillet over medium-high heat. Fry the chicken strips for 3-4 minutes on each side until golden brown and cooked through.

5.Lay out each collard green leaf and spread a layer of sushi rice over the top.

6.Place a few chicken strips, pickled okra, and hot sauce in the center of each leaf.

7.Roll up the collard green leaf tightly around the filling, tucking in the sides as you go.

8.Slice each roll into 1-inch pieces and serve.
