Preparation

1.Heat oil in a large pot over medium heat.

2.Add mustard seeds and cumin seeds. Let them splutter.

3.Add turmeric powder and red chili powder. Stir for a few seconds.

4.Add chopped tomatoes and cook until they soften and release their juices.

5.Add water, jaggery or brown sugar, and salt. Bring to a boil.

6.Reduce the heat and simmer for 15-20 minutes, allowing the flavors to meld together.

7.Using an immersion blender or a regular blender, blend the soup until smooth.

8.Return the soup to the pot and heat it for a few more minutes.
