In this Sindhi adaptation of the original Thai Tom Yum Boran, we incorporate traditional Sindhi spices like cumin, coriander, and turmeric to infuse the soup with unique flavors. Additionally, we use tamarind pulp and lemon juice to add a tangy twist to the dish, which is not typically found in the original Thai version. Preparation

1.Heat oil in a large pot over medium heat. Add the chopped onion and minced garlic. Sauté until the onion turns translucent.

2.Add the cumin powder, coriander powder, turmeric powder, and red chili powder to the pot. Stir well to coat the onions and garlic with the spices.

3.Add the diced tomatoes and sliced green chilies to the pot. Cook for a few minutes until the tomatoes soften.

4.Pour in 4 cups (950ml) of water and bring the mixture to a boil.

5.Reduce the heat to low and add the shrimp to the pot. Simmer for 5-7 minutes until the shrimp are cooked through.

6.Stir in the tamarind pulp, lemon juice, and salt. Adjust the seasoning according to your taste.

7.Remove the pot from heat and garnish the soup with fresh cilantro.
