1.In a mixing bowl, combine the mashed potatoes, onions, green chilies, cilantro, ginger-garlic paste, turmeric powder, red chili powder, cumin powder, coriander powder, chaat masala, and salt. Mix well to form a smooth mixture.

2.Take a small portion of the potato mixture and flatten it in your palm. Place a few pieces of cheese curds in the center and shape the mixture into a ball, ensuring the cheese curds are well enclosed.

3.Heat oil in a deep pan over medium heat. Once the oil is hot, carefully drop the prepared vadas into the oil and fry until golden brown and crispy. Remove from the oil and drain on a paper towel.

4.Slice the soft buns horizontally, without cutting them all the way through. Spread green chutney on one side and tamarind chutney on the other.
