While the original Višegradska čorba is a meat-based soup, this Monmouthshire-inspired version focuses on the abundance of vegetables found in the region. The traditional Bosnian spices are replaced with a blend of herbs that are commonly used in Monmouthshire cuisine. Additionally, the cooking technique has been adapted to create a thick and hearty soup, characteristic of Monmouthshire dishes. Preparation

1.Heat the olive oil in a large pot over medium heat.

2.Add the diced onion and sauté until translucent.

3.Add the sliced carrots, leeks, and diced potatoes to the pot. Cook for 5 minutes, stirring occasionally.

4.Stir in the shredded cabbage and cook for another 2 minutes.

5.Pour in the vegetable broth and add the bay leaf, dried thyme, and dried rosemary.

6.Season with salt and pepper to taste.

7.Bring the soup to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the vegetables are tender.
