Preparation

  1. 1.
In a large mixing bowl, combine the all-purpose flour, baking powder, and salt for the roti bread. Mix well.
  2. 2.
Add the vegetable oil to the flour mixture and gradually pour in the warm water. Mix until a soft dough forms.
  3. 3.
Knead the dough on a lightly floured surface for about 5 minutes until it becomes smooth and elastic. Cover the dough with a damp cloth and let it rest for 30 minutes.
  4. 4.
In the meantime, prepare the filling. Heat the vegetable oil in a large skillet over medium heat.
  5. 5.
Add the diced onion and minced garlic to the skillet and sauté until they become translucent and fragrant.
  6. 6.
Stir in the ground cumin, turmeric, coriander, and garam masala. Cook for an additional minute to toast the spices.
  7. 7.
Add the diced potatoes to the skillet and cook until they are slightly tender, about 5 minutes.
  8. 8.
Add the cooked chickpeas, chopped spinach, and diced chicken or shrimp (if using) to the skillet. Cook until the protein is fully cooked and the vegetables are tender.
  9. 9.
Season the filling with salt and pepper to taste. Remove from heat and set aside.
  10. 10.
Divide the rested dough into small balls, about the size of a golf ball. Roll each ball into a thin circle, approximately 8 inches (20cm) in diameter.
  11. 11.
Heat a non-stick skillet or griddle over medium heat. Cook each roti bread for about 1-2 minutes on each side until it puffs up and develops golden brown spots.
  12. 12.
Place a generous amount of the filling onto the center of each roti bread. Fold the sides of the roti over the filling, creating a wrap.
  13. 13.
Serve the Wrap Roti warm and enjoy!

Treat your ingredients with care...

  • Potatoes — Make sure to dice the potatoes into small, even-sized pieces to ensure even cooking.
  • Chickpeas — If using canned chickpeas, rinse them thoroughly before adding to the filling.
  • Spinach — Use fresh spinach leaves and chop them roughly before adding to the filling.
  • Chicken or shrimp — If using chicken or shrimp, make sure to cook them thoroughly before adding to the filling to ensure food safety.
  • Roti bread — Roll the roti bread thin enough to achieve a soft and pliable texture.

Tips & Tricks

  • For a spicier filling, add a chopped chili pepper or a pinch of cayenne pepper.
  • Experiment with different fillings such as curried lentils, roasted vegetables, or grilled tofu for variety.
  • Serve Wrap Roti with a side of tangy tamarind chutney or cooling cucumber raita for added flavor.
  • If you prefer a softer roti bread, cover the cooked roti with a clean kitchen towel to keep them warm and pliable.
  • Leftover Wrap Roti can be refrigerated and reheated in a skillet or microwave for a quick and satisfying meal.

Serving advice

Serve Wrap Roti hot, either as a standalone meal or accompanied by a side dish and a refreshing drink.

Presentation advice

To enhance the presentation, you can fold the Wrap Roti in a triangular shape, exposing the filling slightly. Garnish with fresh cilantro leaves for a pop of color.
