1.Rinse the rice under cold water until the water runs clear. Drain and set aside.

2.In a large pot, heat the vegetable oil over medium heat. Add the onion, garlic, and ginger, and sauté until fragrant.

3.Add the paprika, ground coriander, and ground cumin to the pot, and stir well to combine.

4.Add the diced carrot and bell pepper to the pot, and cook for 5 minutes, until slightly softened.

6.Pour in the chicken or vegetable broth and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 20 minutes, or until the rice is cooked and the mixture has thickened.
