In the Gibraltarian adaptation of Zuppa del monaco, the original Italian dish, we incorporate local flavors and ingredients to create a unique twist. The Gibraltarian Monk's Soup features a variety of fresh seafood commonly found in the waters surrounding Gibraltar, such as prawns, mussels, and fish. Additionally, we infuse the soup with local spices and herbs to enhance the flavors and give it a distinct Gibraltarian taste. 1.Heat olive oil in a large pot over medium heat. Add the chopped onion, minced garlic, diced red bell pepper, carrot, and celery. Sauté until the vegetables are softened.

2.Add the canned diced tomatoes, paprika, cumin, dried oregano, and bay leaf to the pot. Stir well to combine the ingredients.

3.Pour in the fish or vegetable broth and bring the mixture to a simmer.

4.Add the mixed seafood to the pot and gently stir. Season with salt and pepper to taste.

5.Cover the pot and let the soup simmer for about 15-20 minutes, or until the seafood is cooked through.

6.Remove the bay leaf from the soup and discard.

7.Ladle the Gibraltarian Monk's Soup into bowls and garnish with freshly chopped parsley.
