Preparation

1.Heat oil in a large pot over medium heat. Add the chopped onions and sauté until golden brown.

2.Add the minced garlic and grated ginger. Sauté for a minute until fragrant.

3.Add the mutton pieces and cook until browned on all sides.

4.Add the chopped tomatoes and cook until they soften.

5.Add the turmeric powder, cumin powder, coriander powder, and salt. Mix well to coat the mutton with the spices.

6.Add the soaked lentils and enough water to cover the ingredients. Bring to a boil, then reduce the heat to low and simmer for 1 hour or until the mutton is tender.

7.Add the cubed potatoes, diced carrots, and green chilies. Cook for another 15 minutes or until the vegetables are cooked through.

8.Stir in the peas and garam masala. Cook for an additional 5 minutes.

9.Adjust the seasoning if needed. Garnish with fresh cilantro leaves.

10.Serve hot with steamed rice or Oriya bread.
