1.In a bowl, whisk together pineapple juice, orange juice, lime juice, brown sugar, white vinegar, soy sauce, and cornstarch until well combined. Set aside.

2.Heat vegetable oil in a large skillet over medium heat. Add onion, bell pepper, garlic, and ginger. Sauté until the vegetables are tender.

3.Season the fish fillets with salt and pepper. Push the vegetables to the side of the skillet and place the fish fillets in the center. Cook for 3-4 minutes on each side, or until the fish is cooked through and flakes easily with a fork. Remove the fish from the skillet and set aside.

4.Pour the prepared sauce into the skillet and bring to a simmer. Cook for 2-3 minutes, or until the sauce thickens.

5.Return the fish fillets to the skillet and spoon the sauce over them. Cook for an additional 1-2 minutes to allow the flavors to meld together.

6.Serve the Sweet and Sour Fish over coconut rice, garnished with fresh cilantro or parsley.
