Preparation

1.Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until golden brown.

2.Add the lamb cubes to the pot and cook until browned on all sides.

3.Add the diced carrots, potatoes, red bell pepper, and tomatoes to the pot. Stir well to combine.

4.In a small bowl, mix together the Attinkaral spice blend, cumin, coriander, paprika, salt, and black pepper. Sprinkle the spice mixture over the ingredients in the pot and stir to coat evenly.

5.Pour the beef or vegetable broth into the pot, ensuring that the ingredients are fully submerged. Bring the stew to a boil, then reduce the heat to low and cover the pot.

6.Simmer the stew for 1.5 to 2 hours, or until the lamb is tender and the flavors have melded together.

7.Serve the Attinkaral Lamb Stew hot, garnished with fresh parsley.
