1.In a bowl, combine the soy sauce, grated ginger, and minced garlic. Add the tofu cubes and marinate for 15 minutes.

3.Heat vegetable oil in a deep pan or wok over medium-high heat. Fry the tofu cubes until golden and crispy. Remove from the pan and set aside on a paper towel-lined plate to drain excess oil.

4.In the same pan, add sesame oil and stir-fry the broccoli, bell peppers, and carrots until tender-crisp.

5.In a small bowl, whisk together soy sauce, rice vinegar, and honey. Pour the sauce over the stir-fried vegetables and toss to coat evenly.

6.Transfer the stir-fried vegetables to a serving platter and top with the crispy tofu cubes.
