Ingredients
In this Eritrean adaptation of Beef Negimaki, we incorporate traditional Eritrean spices and herbs to infuse the dish with unique flavors. The marinade for the beef includes spices such as berbere, a blend of chili peppers, garlic, ginger, and other aromatic spices commonly used in Eritrean cuisine. The filling is enhanced with Eritrean herbs like basil and parsley, adding a fresh and vibrant element to the rolls. The sauce is also infused with Eritrean herbs, such as tsebel, to create a distinctively Eritrean flavor profile. We alse have the original recipe for Beef Negimaki, so you can check it out.

Preparation
-
1.In a bowl, combine the olive oil, berbere spice blend, soy sauce, honey, minced garlic, salt, and pepper. Mix well.
-
2.Add the beef slices to the marinade and toss until evenly coated. Let it marinate for at least 30 minutes.
-
3.In the meantime, prepare the sauce by combining the beef broth, tsebel, lemon juice, and honey in a small saucepan. Bring to a simmer and let it cook for 5 minutes. Set aside.
-
4.Lay a beef slice flat and place a few slices of bell pepper and onion on top. Sprinkle with chopped basil and parsley.
-
5.Roll the beef tightly, securing it with a toothpick if needed. Repeat with the remaining beef slices and filling.
-
6.Heat a large skillet over medium-high heat. Add a drizzle of olive oil and sear the beef rolls until browned on all sides, about 2 minutes per side.
-
7.Pour the prepared sauce over the beef rolls in the skillet. Reduce the heat to low, cover, and let it simmer for 10-15 minutes, or until the beef is cooked to your desired level of doneness.
-
8.Remove the toothpicks before serving. Serve the Eritrean-style Beef Negimaki with the herb-infused sauce on the side.
Treat your ingredients with care...
- Beef — Choose lean cuts of beef, such as sirloin, for a healthier option. Make sure to slice the beef thinly for easier rolling.
- Berbere spice blend — Adjust the amount of berbere according to your spice preference. Add more for a spicier flavor or reduce it for a milder taste.
- Tsebel — If you can't find tsebel, you can substitute it with a combination of dried oregano, thyme, and rosemary.
Tips & Tricks
- To make the beef rolls easier to handle, partially freeze the beef slices for about 30 minutes before rolling.
- If you prefer a thicker sauce, you can mix a teaspoon of cornstarch with a tablespoon of water and add it to the sauce during the simmering process.
- Serve the Eritrean-style Beef Negimaki with a side of injera, a traditional Eritrean flatbread, for a complete meal.
