In this Korean Chinese adaptation of Boccette in brodo, we incorporate Korean flavors and ingredients to give the dish a spicy and umami twist. The original Italian recipe is transformed by adding gochujang (Korean chili paste) and soy sauce to the broth, which infuses it with a rich and complex flavor. Additionally, the dumplings are filled with a mixture of ground meat, vegetables, and aromatic seasonings commonly found in Korean Chinese cuisine. 1.In a large mixing bowl, combine the ground pork, ground beef, chopped cabbage, green onions, minced garlic, soy sauce, sesame oil, grated ginger, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.

2.Take a dumpling wrapper and place a spoonful of the meat mixture in the center. Moisten the edges of the wrapper with water and fold it in half, pressing the edges together to seal. Repeat with the remaining wrappers and filling.

3.In a large pot, bring the chicken broth to a boil over medium heat. Add the gochujang, soy sauce, sesame oil, rice vinegar, sugar, minced garlic, and grated ginger. Stir well to combine and let the broth simmer for 5 minutes to allow the flavors to meld.

4.Carefully drop the dumplings into the simmering broth and cook for about 8-10 minutes, or until the dumplings are cooked through and float to the surface.

5.Once the dumplings are cooked, remove the pot from the heat. Ladle the soup into bowls, making sure to distribute the dumplings evenly. Garnish with finely chopped green onions and sesame seeds, if desired.

- Dumpling wrappers — If you can't find round dumpling wrappers, you can use square ones instead. Simply cut them into circles using a round cookie cutter or a glass.
