Preparation

1.In a large pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.

2.Add the ground lamb to the pan and cook until browned, breaking it up with a spoon.

3.Stir in the ground cumin, ground coriander, ground cinnamon, salt, and pepper. Cook for an additional 2-3 minutes to allow the spices to release their flavors. Remove from heat and let the filling cool.

4.Preheat the oven to 180°C (350°F).

5.Lay out a sheet of filo pastry and brush it lightly with melted butter. Place another sheet on top and repeat the process until you have 4-5 layers.

6.Cut the layered filo pastry into strips of approximately 10cm (4 inches) wide.

7.Place a spoonful of the spiced lamb filling at the bottom of each strip. Fold the pastry diagonally to form a triangle, enclosing the filling. Continue folding the strip in a triangular shape until you reach the end.

8.Repeat the process with the remaining filo pastry and filling.

9.Place the prepared Bourekia on a baking sheet lined with parchment paper. Brush the tops with melted butter.

10.Bake in the preheated oven for 20-25 minutes, or until the Bourekia are golden brown and crispy.

11.Remove from the oven and let them cool for a few minutes. Garnish with fresh chopped parsley before serving.
