Preparation
-
1.In a bowl, combine soy sauce, mirin, sake, brown sugar, grated ginger, and minced garlic to make the teriyaki marinade.
-
2.Place the chicken breasts in a shallow dish and pour the teriyaki marinade over them. Allow the chicken to marinate for at least 30 minutes, or overnight for enhanced flavor.
-
3.Preheat the grill or a grill pan over medium-high heat.
-
4.Remove the chicken from the marinade, reserving the marinade for later use.
-
5.Season the chicken breasts with salt and pepper on both sides.
-
6.Grill the chicken for about 6-8 minutes per side, or until cooked through and nicely charred.
-
7.While the chicken is grilling, pour the reserved marinade into a small saucepan and bring it to a boil. Reduce the heat and simmer for a few minutes until slightly thickened.
-
8.Once the chicken is cooked, brush the teriyaki glaze onto both sides of the chicken breasts and continue grilling for an additional minute on each side.
-

-
10.Toast the burger buns lightly on the grill or in a toaster.
-
11.Assemble the sandwiches by placing a lettuce leaf on the bottom half of each bun, followed by a sliced chicken breast and tomato slices. Top with the other half of the bun.
-

Treat your ingredients with care...
- Chicken breasts — Pound the chicken breasts to an even thickness before marinating to ensure even cooking.
- Mirin — If you don't have mirin, you can substitute it with a mixture of equal parts rice vinegar and sugar.
- Sake — If you prefer not to use alcohol, you can replace sake with chicken or vegetable broth.
Tips & Tricks
- For an extra burst of flavor, add a drizzle of Japanese mayonnaise or a sprinkle of sesame seeds to the sandwich.
- If you prefer a spicier kick, add a few drops of Sriracha or chili sauce to the teriyaki marinade.
- To make it a complete meal, serve the sandwich with a side of miso soup and a refreshing cucumber salad.
- Experiment with different types of buns, such as steamed buns or brioche buns, to add a unique twist to the sandwich.
- If grilling is not an option, you can also cook the chicken in a skillet over medium heat.
