1.In a bowl, combine the chopped chili peppers, minced garlic, grated ginger, soy sauce, rice vinegar, vegetable oil, crushed Sichuan peppercorns, sugar, and salt. Mix well to create a marinade.

2.Place the rabbit pieces in a large ziplock bag and pour the marinade over them. Seal the bag and massage the marinade into the meat. Let it marinate in the refrigerator for at least 2 hours, or overnight for best results.
