1.In a large mixing bowl, combine the flour and cold butter. Use your fingertips to rub the butter into the flour until the mixture resembles breadcrumbs.

2.Gradually add the cold water to the flour mixture, mixing until a dough forms. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.

3.In a skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and set aside.

4.In the same skillet, sauté the leeks and garlic until softened. Add the dried thyme, dried rosemary, salt, and pepper. Cook for an additional 2 minutes.

6.On a lightly floured surface, roll out the chilled dough into a circle large enough to line a pie dish.

7.Line the pie dish with the rolled-out dough, trimming any excess.

8.Sprinkle half of the grated Welsh cheese over the bottom of the pie crust. Top with the cooked bacon and sautéed leeks mixture. Sprinkle the remaining cheese on top.

9.Roll out the remaining dough and use it to cover the pie, sealing the edges. Cut a few slits on the top crust to allow steam to escape.

10.Brush the top crust with the beaten egg wash.
