Preparation

1.Rinse the split red lentils under cold water until the water runs clear.

2.In a large pot, heat some oil over medium heat and sauté the chopped onion until translucent.

3.Add the minced garlic, scotch bonnet pepper, ground turmeric, ground cumin, and ground allspice to the pot. Stir well to combine and cook for 1-2 minutes until fragrant.

4.Add the rinsed lentils, vegetable broth, and fresh thyme to the pot. Bring to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the lentils are tender and the mixture has thickened.

5.Season with salt to taste and remove the sprig of thyme.

6.Serve the St. Kitts and Nevis Style Dal over steamed rice or with roti. Garnish with fresh cilantro.
