1.In a dry pan, toast the Sichuan peppercorns over medium heat until fragrant. Remove from heat and grind into a fine powder.

2.In a mixing bowl, combine the ground pork, shrimp, Sichuan peppercorn powder, chili oil, soy sauce, Shaoxing wine, ginger, garlic, green onion, sesame oil, sugar, salt, and white pepper. Mix well until all ingredients are evenly incorporated.

3.Take a dumpling wrapper and place a spoonful of the filling in the center. Moisten the edges of the wrapper with water and fold it in half, sealing the edges tightly. Repeat with the remaining wrappers and filling.

4.Bring a large pot of water to a boil. Carefully drop the dumplings into the boiling water and cook for about 5-6 minutes, or until they float to the surface.

5.Remove the dumplings from the water using a slotted spoon and serve hot.
