Preparation

  1. 1.
In a dry pan, toast the Sichuan peppercorns over medium heat until fragrant. Remove from heat and grind into a fine powder.
  2. 2.
In a mixing bowl, combine the ground pork, shrimp, Sichuan peppercorn powder, chili oil, soy sauce, Shaoxing wine, ginger, garlic, green onion, sesame oil, sugar, salt, and white pepper. Mix well until all ingredients are evenly incorporated.
  3. 3.
Take a dumpling wrapper and place a spoonful of the filling in the center. Moisten the edges of the wrapper with water and fold it in half, sealing the edges tightly. Repeat with the remaining wrappers and filling.
  4. 4.
Bring a large pot of water to a boil. Carefully drop the dumplings into the boiling water and cook for about 5-6 minutes, or until they float to the surface.
  5. 5.
Remove the dumplings from the water using a slotted spoon and serve hot.

Treat your ingredients with care...

  • Sichuan peppercorns — Toasting the peppercorns before grinding them enhances their flavor. Be careful not to burn them as it can make the dish bitter.
  • Chili oil — Adjust the amount of chili oil according to your spice tolerance. Add more for extra heat or reduce for a milder flavor.
  • Shrimp — Ensure the shrimp is peeled and deveined before using in the filling to avoid any unpleasant textures.

Tips & Tricks

  • For a vegetarian version, substitute the ground pork and shrimp with finely chopped mushrooms and tofu.
  • Serve the Sichuan-style dim sum with a dipping sauce made from soy sauce, vinegar, minced garlic, and a touch of sugar.
  • If you prefer a spicier kick, sprinkle some additional Sichuan peppercorn powder on top of the cooked dumplings.
