The original dish often includes meat, but this Australian version is vegetarian-friendly. Preparation

1.In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

2.Add the sliced mushrooms to the skillet and cook until they release their moisture and become golden brown, about 5-7 minutes.

3.Meanwhile, rinse the rice under cold water until the water runs clear. Drain well.

4.Add the rice to the skillet and stir to coat it with the butter and mushrooms.

5.Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover the skillet, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.

6.Stir in the heavy cream and season with salt and pepper to taste. Cook for an additional 2-3 minutes until the cream is heated through.
