1.In a medium saucepan, combine the sugar, water, and honey. Cook over medium heat, stirring constantly, until the sugar has dissolved and the mixture reaches a temperature of 250°F (120°C) on a candy thermometer.

2.While the sugar mixture is cooking, beat the egg whites in a separate bowl until stiff peaks form.

3.Slowly pour the hot sugar mixture into the beaten egg whites, while continuing to beat on low speed. Increase the speed to high and beat until the mixture becomes thick and glossy, about 5-7 minutes.

4.Using a spoon or a piping bag, drop or pipe small mounds of the mixture onto a parchment-lined baking sheet. Sprinkle the crushed peanuts or sesame seeds on top of each mound.
