Treat your ingredients with care...

  • Lamb — Choose tender cuts of lamb, such as shoulder or leg, for the best results. Trim any excess fat before cooking.
  • Cumin — Toasting the cumin seeds before grinding them will enhance their flavor. Simply heat them in a dry skillet over medium heat until fragrant, then grind.
  • Coriander — For a fresher taste, use freshly ground coriander seeds instead of pre-ground powder.
  • Cinnamon stick — If you don't have a cinnamon stick, you can substitute with 1/2 teaspoon of ground cinnamon.
  • Fresh cilantro — Add the cilantro just before serving to preserve its vibrant flavor.

Tips & Tricks

  • For an extra burst of flavor, marinate the lamb chunks in a mixture of olive oil, garlic, and Moroccan spices for a few hours before cooking.
  • If you prefer a spicier stew, add a pinch of cayenne pepper or a chopped chili pepper to the pot.
  • Serve the stew with a side of fluffy couscous or crusty bread to soak up the delicious broth.
  • Leftovers can be refrigerated and enjoyed the next day, as the flavors will continue to develop and intensify.
  • Feel free to customize the vegetables in the stew based on your preferences. Bell peppers, zucchini, or butternut squash would all be great additions.
