Ingredients
In this Epirotic adaptation, we incorporate Greek herbs, feta cheese, and extra virgin olive oil to infuse the dish with Mediterranean flavors. The traditional Mexican spices are replaced with a blend of Epirotic herbs, giving the fajitas a unique twist. 1.In a bowl, combine the sliced chicken or beef with olive oil, minced garlic, dried oregano, dried thyme, dried rosemary, paprika, salt, and black pepper. Mix well and let it marinate for at least 30 minutes.

2.Heat a large skillet or grill pan over medium-high heat. Add the marinated chicken or beef and cook until browned and cooked through, about 5-7 minutes.

3.Remove the cooked chicken or beef from the skillet and set aside. In the same skillet, add the sliced bell peppers and onions. Sauté until they are tender and slightly charred, about 5 minutes.

4.Return the cooked chicken or beef to the skillet and toss with the bell peppers and onions. Cook for an additional 2 minutes to allow the flavors to meld together.

5.Sprinkle the crumbled feta cheese over the fajita mixture and gently toss to combine.

6.Serve the Epirotic Fajitas hot with warm pita bread on the side.
