Preparation

    Drain and rinse the soaked white beans.

    In a large pot, heat the vegetable oil over medium heat.

    Add the chopped onion, minced garlic, diced carrots, and diced celery. Sauté until the vegetables are softened.

    Add the drained white beans, Shanxi vinegar, aged soy sauce, ground cumin, dried thyme, and bay leaf to the pot. Stir well to combine.
