1.Drain and rinse the soaked white beans.

2.In a large pot, heat the vegetable oil over medium heat.

3.Add the chopped onion, minced garlic, diced carrots, and diced celery. Sauté until the vegetables are softened.

4.Add the drained white beans, Shanxi vinegar, aged soy sauce, ground cumin, dried thyme, and bay leaf to the pot. Stir well to combine.

5.Pour in the vegetable broth and bring the mixture to a boil.

6.Reduce the heat to low, cover the pot, and simmer for about 1 hour or until the beans are tender.

7.Season with salt and pepper to taste.

8.Remove the bay leaf before serving.
