Preparation

1.Clean the mushrooms and trim any tough stems. Slice the shiitake and oyster mushrooms, and separate the enoki mushrooms into small clusters.

2.Heat the vegetable oil in a wok or large skillet over medium-high heat.

3.Add the minced garlic and grated ginger to the hot oil and stir-fry for about 30 seconds until fragrant.

4.Add the sliced shiitake and oyster mushrooms to the wok and stir-fry for 2-3 minutes until they start to soften.

5.Add the enoki mushrooms and continue stir-frying for another 2 minutes.

6.In a small bowl, mix together the soy sauce, dark soy sauce, sugar, salt, and white pepper. Pour the sauce over the mushrooms and stir-fry for an additional 2 minutes until the mushrooms are well coated.

7.Add the sliced green onions and stir-fry for another minute.

8.Remove from heat and garnish with fresh cilantro.
