Preparation

    Clean the mushrooms and trim any tough stems. Slice the shiitake and oyster mushrooms, and separate the enoki mushrooms into small clusters.

    Heat the vegetable oil in a wok or large skillet over medium-high heat.

    Add the minced garlic and grated ginger to the hot oil and stir-fry for about 30 seconds until fragrant.
