The original fricandó amb moixernons dish features beef, mushrooms, and a sauce made with red wine and tomatoes. In the Togolese version, we incorporate local spices and flavors such as ginger, garlic, and African hot pepper to enhance the taste.   • 500g (1.1 lb) beef, cut into cubes
  • 200g (7 oz) mushrooms, sliced
  • 2 onions, finely chopped
  • 3 cloves of garlic, minced
  • 1 thumb-sized piece of ginger, grated
  • 2 tomatoes, diced
  • 2 tablespoons tomato paste
  • 2 tablespoons vegetable oil
  • 1 teaspoon African hot pepper (or substitute with cayenne pepper)
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Preparation

    Heat the vegetable oil in a large pot over medium heat.
