Preparation
-
1.In a bowl, combine pineapple juice, soy sauce, lime juice, brown sugar, Caribbean hot sauce, minced garlic, minced scotch bonnet pepper, and Caribbean spice blend. Mix well to make the marinade.
-
2.Place the chicken pieces in a ziplock bag and pour the marinade over them. Seal the bag and refrigerate for at least 1 hour, or overnight for best results.
-
3.In a shallow dish, combine flour and a pinch of salt. Remove the chicken from the marinade, allowing any excess marinade to drip off, and coat each piece in the flour mixture.
-
4.Heat vegetable oil in a large skillet over medium-high heat. Add the coated chicken pieces and cook until golden brown and crispy, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
-
5.In the same skillet, add fresh pineapple chunks and cook for 2 minutes until slightly caramelized. Remove the pineapple from the skillet and set aside.
-
6.In a small bowl, whisk together chicken broth and cornstarch until smooth. Pour the mixture into the skillet and cook over medium heat until thickened.
-
7.Return the chicken and pineapple to the skillet, tossing to coat them in the sauce. Cook for an additional 2-3 minutes until the chicken is fully cooked and the sauce has thickened.
-
8.Garnish with sliced green onions and sesame seeds. Serve hot with steamed rice or Caribbean-style fried rice.
Treat your ingredients with care...
- Pineapple — Use fresh pineapple for the best flavor. If fresh is not available, you can use canned pineapple chunks, but make sure to drain them well before using.
- Scotch bonnet pepper — Handle with caution as it is very spicy. Wear gloves while handling and avoid touching your face or eyes. Adjust the amount according to your spice tolerance.
