Preparation

1.In a bowl, combine pineapple juice, soy sauce, lime juice, brown sugar, Caribbean hot sauce, minced garlic, minced scotch bonnet pepper, and Caribbean spice blend. Mix well to make the marinade.

2.Place the chicken pieces in a ziplock bag and pour the marinade over them. Seal the bag and refrigerate for at least 1 hour, or overnight for best results.

3.In a shallow dish, combine flour and a pinch of salt. Remove the chicken from the marinade, allowing any excess marinade to drip off, and coat each piece in the flour mixture.

4.Heat vegetable oil in a large skillet over medium-high heat. Add the coated chicken pieces and cook until golden brown and crispy, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.

5.In the same skillet, add fresh pineapple chunks and cook for 2 minutes until slightly caramelized. Remove the pineapple from the skillet and set aside.
