Preparation

1.Rinse the basmati rice under cold water until the water runs clear. Soak the rice in cold water for 30 minutes, then drain.

2.In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until golden brown.

3.Add the lamb pieces to the pot and cook until browned on all sides.

4.Stir in the Qatari spice blend and saffron water, coating the lamb evenly.

5.Add the drained rice to the pot and stir well to combine with the spices and lamb.

6.Pour in the chicken or lamb broth and season with salt to taste. Bring the mixture to a boil.

7.Reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is cooked and the liquid has been absorbed.

8.Remove the pot from heat and let it sit, covered, for an additional 10 minutes to allow the flavors to meld.
