Ingredients
In this vegan adaptation, we replace the traditional meat with a flavorful combination of marinated tofu and mushrooms. The creamy tzatziki sauce is transformed into a dairy-free version using cashews and tangy lemon juice. Preparation

1.In a bowl, combine the olive oil, soy sauce, minced garlic, dried oregano, ground cumin, paprika, dried thyme, salt, and pepper.

2.Cut the pressed tofu into thin strips and add them to the marinade. Let it marinate for at least 30 minutes.

3.Heat a large skillet over medium heat and add the marinated tofu strips. Cook for 5-7 minutes until lightly browned. Remove from the skillet and set aside.

4.In the same skillet, add the sliced mushrooms and cook for 5 minutes until they release their moisture and become tender. Remove from the skillet and set aside.

5.Warm the pita breads in a toaster or oven.

6.To assemble the Gyros, spread a generous amount of the vegan tzatziki sauce (recipe below) on each pita bread. Top with shredded lettuce, sliced red onion, tomato slices, marinated tofu, and sautéed mushrooms.

7.Roll the pita bread tightly and secure with toothpicks if needed. Serve immediately.
